  9. Take 100 grams butter
  10. Take 6 spriggs of thyme

Coat the yellowtail fillets with a light layer of olive oil and sprinkle with the chile mixture. Remove from grill and top with Mango Salsa. Steps to make Grilled yellowtail:
  1. Preheat oven to 220°C
  2. Line a oven pan with tinfoil
  3. Brush melted butter (40 grams) on tinfoil and add the sliced garlic
  4. Mix together the spices, season fish on skin side with half of the spices and place skin down in oven pan
  5. Melt remainder of butter, mix with minced garlic and brush on fish
  6. Season the fish with the remainder of the spices
  7. Place the onions on top of the fish followed by the green pepper and finished with the thyme
  8. Cover with tinfoil and put in oven for 30 minutes
  9. Remove from oven. Turn oven onto grill only
  10. Remove the top tinfoil and put the fish back into the oven for 7 minutes
