This sesame crusted tuna recipe uses sous vide low temperature cooking to make a delicate fish entree. I love a nice seared piece of tuna that is rare on the inside, but cooking it at a very low temperature with sous vide ensures that it is evenly cooked throughout. Most sesame-crusted salmons are one-note affairs in which rich, fatty salmon is coated with bland sesame seeds. We brine our fillets to ensure that each piece is seasoned and remains moist after cooking.

- Mix all of the ingredients from the marinade section and cover the fish. Leave it to marinade for 20 min max
- Cut the butternut squash in 0,5 cm thick discs.
- Cover the tuna steaks in sesame. Remaining marinade use to cover the babycorn. After 10 minutes use the marinade to cover green beans
- On the preheated Bbq place the butternut squash and keep basting them with the soy marinade. Cook them until soft inside. It should take max 10 min.
- Place the tuna steaks on very hot grill and cook it from bith sides for about 3 minutes. Start cooking the other veggies at the same time or grill them earlierand keep them warm
- Plate it up and drizzle with the sauce.
