It's meaty, healthy, and not to expensive though. Using honey and sweet soy sauce, this recipe is really good. Great recipe for Grilled Pomfret for dinner :). Grilled Fish to me, and its Pomfret or Macrel which always comes to my mind.

Steps to make Grilled Black Pomfret:
  1. Clean the black pomfret fish (also can ask the seller to do it), then rinse with lime juice to avoid the fishiness.
  2. Mix all the ingredients for the marinade. Mashed garlic, shallots, chilli, chilli sauce, ground corriander, pepper and lemongrass.
  3. Marinade the fish for about 20 minutes. Then sprinkle some salt just right before it's grilled.
  4. Heat the charcoal. Wrap fish with banana leaves, then grill.

I have grown up loving this delicacy, courtesy my Parents's Sea Coastal roots. The way one can pack in a heavy punch with this Fishy Delight, is beyond comparison :) The fish you see here is the black pomfret, which is readily available in Asia, but you can use other whole fish such as mackerel, hake, sea bass, red mullet, or sea bream. These fish selections are good since they will remain moist after grilling on the barbecue. Been looking to cook pomfret for some time, mainly because the fish is always available fresh at the local market, so I picked this recipe as it seemed easy to make. Some notes though, I didn't realize this should be grilled, so I ended up using a frying pan, it still came out tasting pretty good.
