The ingredients needed to make Khao Maew:
  1. Make ready 2 Thai grilled mackerel (can use normal mackerel)
  2. Take 1 small cup Nam Pla Plick (check my recipe)
  3. Get 5-8 green beans (finely chopped)
  4. Make ready 1 shallots (finely sliced)
  5. Take 1 bunch dill (finely chopped)
  6. Prepare 1-2 tbsp chilli flakes
  7. Take 1-2 bird eyes chilli 🌶 (finely chopped)
  8. Take 1 lime
  9. Get 1/2 cucumber (sliced)
  10. Prepare Coriander for garnish

These bright-eyed cats were prized by the aristocrats of Thai society and were considered sacred and kept by the ruling class for centuries. Known as the "White Gem," the Khao Manee was through to bring good luck and was a popular breed with Thai royalty. The Khao Manee was said to be kept and bred initially by Siam royals, as was the case with other rare colored cats. Khao means rice and Maew means Cat.

Instructions to make Khao Maew:
  1. Grilled or shallow fried your mackerel until lovely, crisp and golden. Leave it to cool and take the bones out.
  2. Put some cooked rice in a mixing bowl. Add some green beans, shallots, half of mackerel and dills.
  3. Add some Nam Pla Plick, chilli flakes and mix well.
  4. Well hand mix is the best (don’t forget to wash your hands first!)
  5. Serve on a plate with the rest of mackerel, cucumber, red chilli and lime.

This is my childhood memory dish that I have to ask my mum to make it when we have leftover rice, leftover Thai mackerel and leftover Nam Pla Plick🌶! It is said that Khao Manee cats were the royal cats of Siam. Khao Manee cats have a soft, short, pure-white coat. They can have gold eyes, blue eyes or odd eyes.
