- Prepare 1 large Japanese leek
- Prepare 1 enough to coat everything Herb salt
- Take 1 tbsp White wine
- Take 2 tbsp Olive oil

- Prepare 1 for topping Fresh parsley
Shake a little of the salt off the sardines before placing on the hot charcoal grill. So, our Sicilian barbecue involved not just one type of fish. - Remove the head and innards of the sardines, and carefully wash all the bloody parts. Pat dry with kitchen paper.
- Cut the Japanese leek into 5 cm lengths, and then into half lengthways. Line them up in the baking tray (the cut side facing up).
- Line the sardines on top of the leeks. Sprinkle the white wine, herb salt, olive oil and Parmesan cheese on top.
- Grill for 15 minutes. Top them with chopped parsley and they're done!
