- Thaw the fillets, and drain the water. Leave aside.
- In a nonstick pan, heat the oil olive. Add garlic, and stir till it becomes brownish in color.
- Now add in the dried herbs, chill flakes, salt, pepper, and brown sugar. Mix gently.
- Next, pour in the wine. Bring the heat to low, and simmer the wine for 1-2 mins.
- Turn off the heat, and let the mixture cool.
- Then marinate the fish fillets with this mix. Leave this aside for about 5-6 mins.
- Meanwhile, preheat your oven to 120 degrees Celsius.
- Place the fillets on a tray that has been brushed with oil, and put it in the oven to grill.
- Cook for 6-7 mins on one side. Then flip the fillets, and cook for another 5-6 mins. The fish is done when the flesh is whitish and flaky. PS: The cooking time may increase/decrease by 3-4 mins depending on the type of fish being used.
- Serve hot! I don't think this dish requires accompaniments like chutney/sauce/vinaigrette.
- You can serve this with soup, grilled veggies, and bread.
I used thick cuts of Cod and italian style diced tomatoes. Added some extra seasonings as suggested by earlier reviews and–most importantly–added about a pound of raw shelled shrimp at the same time as the fish. Loved the fact that this dish is SUPER quick and very healthy! Light the grill or heat the broiler. In a small stainless-steel saucepan, combine the oil, garlic, sage, and rosemary.
